Going out of my depth by doing an off site event for 2500 where we are the only ones selling food. Any advice on how much I should bring?

Recently my small business was asked to provide hot prepped food (breakfast sandwiches, ham, and a turkey club) and coffee at a graduation. We will be there at 7 to be able to serve the on campus students breakfast and coffee, be open to the public from 8-10 (when the event starts) and then from 12-2 for a large rush afterwards. With 360 students there in the AM and 2500 total there for afterwards, how much food/coffee should I expect to bring/sell.
