Break-Even Analysis – Industrial Products

I'm trying to figure out how to calculate BE when we distribute thousands of industrial automation products and the clients place orders with varied products based on their plant needs (which fluctuates a lot). The sales can be in the thousands.

What's the best way to calculate BE and set sales goals for our sales people? I'm new to this and all help would be appreciated.
